Slice apples and arrange in layers on a parchment lined baking tray. Brush with melted butter and sprinkle with sugar. Bake for 45 minutes or until they are tender and golden brown.
Roll out pie crust to fit baking dish. Dock base with a fork. Line with foil, or parchment, and pie weights if you have them. Blind bake crust and let cool completely before filling.
Stir in your cardamom, vanilla and pinch of salt. Pour filling into crust and bake at 325°F for 30 minutes or until center has just set.
Let cool at room temperature.
