A recipe for a not-quite Caesar salad with roasted artichokes, crispy pinto beans, bagel croutons and an anchovy and red wine vinegar dressing. It's insanely good!

To make dressing combine olive oil ,  garlic,  red wine vinegar, parmesan, anchovies, Dijon mustard, mayonnaise and fresh ground black pepper and blend until smooth.

Scatter beans, artichokes and bread, or bagel chunks, all on separate baking trays and roast at 375°F until crisp. Check frequently and toss every now and then.

Scatter your lettuce on a platter. Top with the crispy beans, artichokes and croutons. Drizzle over lots of dressing, a few extra shavings of parmesan and some fresh ground black pepper.
