A recipe for a classic spice lovers' condiment, chili crisp. It's spicy, crunchy and packed with flavor. This version has lots of sesame, clove and Sichuan peppercorns.

Add garlic, shallots, cinnamon sticks and star anise to cold oil. Slowly fry everything until deep golden brown. Should take about 20-30 minutes.

Strain oil into heat proof bowl along with your chili flakes, ginger, soy and remaining ingredients. It will sizzle and toast everything.

Once everything is cooled, you can combine those crispy bits with the oil, give it a mix and stash in a jar or air tight container.  And then it’s ready to use!
