Chipotle Watermelon Salad

A recipe for a spicy and smokey watermelon salad topped with cilantro, radishes, queso fresco and pepitas. Refreshing, spicy and easy to make. This will be your new go to salad.

3 C cubed watermelon  4 radishes 1 small shallot 1/4 C pepitas Handful cilantro 1/4 C queso fresco  1 tsp chipotle powder 2 tbsp olive oil

InGREDients

Dice watermelon into bite sized chunks, remove any seeds and arrange on a chilled plate. Scatter over thinly sliced radishes and shallots.

STEP 1

Crumble queso fresco and sprinkle on top. Add in lots of toasted pumpkin seeds and a handful of fresh cilantro leaves.

STEP 2

To finish salad, season with fresh ground black pepper, flakey salt and some extra virgin olive oil. Then eat up!
