Whisk egg yolks and lemon juice together. Over a double-boiler add in one cube of butter at a time to make your Hollandaise sauce.

Toast up some English muffins in a pan with lots of butter. Poach eggs for 2-3 minutes in gently simmering water. Drain on a paper towel and set aside.
