Prep you blossoms by wiping off any dirt and remove the stamens. It’ll give you more room for the ricotta filling.

Make ricotta mixture and stuff the blossoms. Aim for about halfway full. You want to be able to twist the end of the blossom together after it’s stuffed to seal it up.

Batter and pan fry for a few minutes on each side. Just until they are golden and crispy. Drain on a paper towel and season with salt while they are still hot. Then eat up!
