Grilled Chicken and Peach Salad

A recipe for a delicious curly endive salad topped with grilled chicken, grilled peaches, corn, black beans, basil and a delicious whole grain mustard vinaigrette.

4 chicken thighs 3 banana peppers 3 peaches cut in wedges 1-2 ears sweet corn 1 head curly endive 1 C black beans  1 handful basil leaves 1 shallot  

For The Salad

3 tbsp olive oil 2 tbsp red wine vinegar 1 tsp whole grain mustard 1/2 tsp honey fresh thyme 1 pinch salt fresh black pepper 

For The Vinaigrette

Combine vinegar, mustard, honey, salt, pepper and thyme. Mix till combined. Slowly drizzle in oil while whisking to emulsify. Or, add to a jar and shake it up!

MAKE THE VINAIGRETTE

Coat chicken, peppers, corn and peaches with oil and season with salt. Get everything on a hot grill and cook until fruit and veg is charred and chicken is cooked through.

MAke The Salad

Make a bed of greens, and layer on your toppings. Spoon over plenty of dressing and add some additional fresh cracked pepper and flaky salt.
