A quick and easy recipe for grilled zucchini topped with fresh ricotta, basil, lemon and olive oil. It's a great vegetarian side dish for any summer bbq.
Thinly slice your zucchini. You’re aiming for about 1/8” thick slices here, but honestly go as thin as you have the patience for. Generously salt and oil your slices.
Arrange on plate and top with fresh ricotta cheese, lemon zest and basil. Then to finish, squeeze over lemon juice and a generous drizzle of olive oil and flakey salt. Eat up!
