Homemade Beef Stock

A simple and easy to follow recipe for homemade beef stock. Made with roasted beef bones and ground meat, for extra flavor, this stock is perfect for French onion soup, beef stews or risottos.

~1 lb beef bones 1/4 lb ground beef 1 large carrot 1 stalk celery  3 cloves garlic 2 shallots onion or leek 1 tsp tomato paste 4 sprigs fresh thyme 2 bay leaves 5 peppercorns

Ingredients

Roast beef bone and veg at  400°F/200°C for 20 – 25 mins. You want it roasted and dark brown, but not burnt. Just keep an eye on it and toss things around about halfway through if needed.

Scrape everything into a large pot and cover with water. Add in a teaspoon of tomato paste, peppercorns, thyme and bay leaves. Simmer for 5-6 hours.

Strain the stock, let it cool, place in the fridge. The fat will solidify at the top and you can easily remove it. It’s great to cook with. It’ll make some incredible  roasted potatoes.
