A classic baked macaroni and cheese recipe just like Grandmoms! This version uses rigatoni and the cheese sauce is made with combination of Swiss and cheddar cheeses for extra flavor.

1 lb rigatoni or macaroni 3 C whole milk 1 stick unsalted butter 1/2 C all-purpose flour 8 oz extra-sharp cheddar 6 oz swiss salt & pepper fresh ground nutmeg  1 1/2 cups bread crumbs

INGREDIENTS

Boil pasta and undercook by about 2-3 mins according to the directions on the package. Drain well.

STEP 1

Melt butter in a pan and add flour. Cook over low heat for 2 minutes, stirring with a whisk. Still whisking, add the hot milk and cook for a minute or two more, until thick and smooth.

STEP 2

Off heat, add cheese, salt, pepper, nutmeg and stir till melted. Add pasta and stir well. Place the mixture in a large, greased baking dish, or smaller individual servings if you want.

STEP 3

Melt 2 tablespoons of butter, mix with bread crumbs, and top along with reserved grated cheddar. Bake for 30 to 35 minutes, until bubbling and golden brown.
