Poached Pears & Chocolate Sauce

A twist on the classic Pears Belle Helene, perfectly poached pears with a thick dark chocolate sauce and plenty of toasted almonds for crunch.

The Poached Pears 5 Pears Star Anise +Cinnamon Stick Vanilla Bean Sugar Salted Dark Chocolate Sauce Dark Chocolate Heavy Cream Salt To Serve Sliced Almonds Vanilla Ice Cream

INGREDIENTS

Combine sugar, star anise, cinnamon, vanilla, water and salt. Bring to a boil while you prep your pears. Make sure all sugar has dissolved.

Peel pears leaving the stem intact. Core the bottom. I like to use a 1/4 tsp measure for this. You can use a spoon or carefully remove it with a pairing knife.

Add pears to poaching liquid and simmer for 30 minutes. The pears are done when you can easily pierce them with a pairing knife.

Chop chocolate into small bits, add in warmed cream, a pinch of salt and let sit for 2 minute, then stir until smooth.

Remove pears from the poaching liquid, pour over hot chocolate sauce and top with toasted almonds and a generous pinch of flaky salt. Serve with a few scoops of vanilla ice cream and eat up!
