Strawberry Ice Cream

This classic strawberry ice cream recipe is simple, sweet and delicious. The perfect summer treat to savor when those seasonal strawberries at their peak.

1 quart strawberries 1/2 C packed brown sugar 1” vanilla bean or 1/4 tsp extract 1 C whole milk 1 C heavy cream pinch of salt

INGREDIENTS

Make sure your ice cream maker insert is properly chilled. It usually take a minimum of 24 hours to fully freeze. But always follow any instructions provided with your ice cream maker.

STEP 1

Reserve about 1/3 of your berries to add in at the end for texture. Puree the remaining washed and hulled strawberries.

STEP 2

Boil pureed strawberries and sugar for 3-5 minutes until slightly reduced. Add vanilla and salt off the heat. Let mixture cool to room temperature.

STEP 3

Once the strawberry mixture has cooled, add in heavy cream and milk. Check for flavor. The ice cream base should be slightly sweeter than you want the final ice cream. Once it's frozen it won't taste as sweet.

STEP 4

Let your ice cream base chill in the fridge. For at least a few hours. Once chilled, you can add to your ice cream maker and let it churn.

STEP 5

Once it's all frozen, toss in your reserved berries, and transfer ice cream to a freezer container and let it fully freeze to eat later, or enjoy some now!
