A recipe for a refreshing watermelon and feta salad topped with Castelvetrano olives, fresh basil and pickled onions. Sweet, tart, salty and sour, this is the perfect salad for summer.

Slice onions and cover in vinegar. Let sit for 10-15 minutes to quickly pickle. Cut up watermelon and pit olives.

To plate, arrange watermelon in an even layer. Scatter with crumbled feta, torn olives, fresh basil and your pickled onions  (be sure to drain off any excess vinegar).
