A simple recipe for braised rhubarb flavored with cardamom and then topped with pistachios. Then it is all served over yogurt for a light dessert or simple and delicious breakfast.
Start by preheating your oven to 375° F (~190°C). Slice rhubarb into 3” pieces. Add to your baking dish and toss with sugar, vanilla, cardamom, orange zest and orange juice.
Bake for 20-25 mins or until rhubarb is just tender. This is good served warm or cold, but be sure to let it cool for at least 10 mins because cause that liquid is boiling hot!
