A classic recipe for my grandmother's pickled eggs with beets. Hard boiled eggs get pickled with beets and vinegar.  They’re slightly sweet, a little bit sour and very delectable.

Boil your beets until super tender. Let cool and remove the skin and slice into 1/4" disks or bite sized pieces. Or, use a jar or pre-made pickled beets.

Make a batch of hand boiled eggs. I like these to have fully set yolks, so about 12 minutes boiling and then immediately into an ice bath for at least 5 minutes.

Peel eggs and then add to a large jar, or airtight container, and  layer in your beets, onions and hard boiled eggs. Cover with vinegar solution.

Let the eggs sit overnight, at a minimum, they get better after a few days. The color will deepen the longer they sit. Then enjoy them as a simple and easy side dish!
