Used some pre-made wrappers this time from @nasoya and I would highly recommend them. I do like making the wrappers from scratch, just cause I like playing with dough, but didn't have the time and these were solid.

Used a bunch of stuff I had on hand for the filling. Ground beef, cabbage, five spice, garlic, toasted sesame oil and scallions. Did a soy, vinegar, chili and sesame dipping sauce. Recipe is below šŸ‘‡šŸ»ā

Filling:
· 3/4 c chopped cabbage (more or less)
· 1/2 lb ground beef
· 2 tbsp water
· 1/2 tsp toasted sesame oil
· 1/4 tsp five spice
· 1 clove garlic - crushed
· salt
· 1 chopped scallion

Sauce:
Combine everything in bowl
· 1/4 c soy sauce
Ā· 1/4 c cider vinegar - use rice wine if ya got it (I didn't šŸ™„)
· 1/2 tsp toasted sesame oil
· big pinch brown sugar
· chopped scallion
· pinch chili flakes
· 1 tsp toasted sesame seeds

Toppings:
· toasted sesame seeds
· sliced scallions

Add cabbage to a food processor and pulse till nice and fine. Transfer to a mesh strainer over a bowl and add a good pinch of salt. Mix. Let sit at least 10 mins then squeeze out as much liquid as you can.

Add cabbage back to food processor along with the rest of your filling ingredients, minus the scallion. Pulse till well combined and smooth. Mix in scallions by hand.

Stuff wontons with a scant teaspoon of filling, fold in half, and then pinch corners together. You can wet wrapper along seams if they're not sticking.

To cook wontons, add some neutral oil to a non-stick pan, cook on med-high heat for 3-4 mins. Add 1/2 c water (+2 tsp flour for the lace), cover, turn heat to med-low, and steam for 6 mins. Remove lid, raise heat and cook till wonton bottoms, and lace, is golden brown and crisp.

Flip out onto plate, sprinkle with sesame seeds and scallions. Now eat!

Been binge watching @viewsontheroad lately. I used their flour tortilla recipe, just subbed in some bacon fat, and the red sauce from the smothered burritos. I plan on making ALL the sauces, and a ton of recipes they have over there. Go check em out, you'll be drooling!!
