6+ Squash Blossoms – Really as Many as you Want and can get Your Hands On⁠
Handful of Sage Leaves⁠
1C Ricotta⁠
Salt⁠
Fresh Pepper⁠
~1/2C Flour⁠
~1/2C ice Water – you Could Also use Very Cold Bubbly Water or Better yet, Beer⁠
~1C Olive oil – for Frying⁠
Flakey Salt⁠
⁠
Get your blossoms all prepped. Wipe off any dirt, check for bugs and remove the stamens. ⁠
⁠
Make your ricotta filling. Mix ricotta and season generously with salt and pepper. Then stuff your squash blossoms. Aim for about halfway full. Twist the end of the blossom together to seal it up.⁠
⁠
Batter and fry. Get a pan pre heated over medium-high heat and add in 1/2” of oil. I recommend using a small pan for this so you don’t need to use a ton of oil. Combine ice water and flour together. Whisk to combine. Drag the stuffed squash blossoms and sage leaves through the batter to coat and gently place in the oil and fry for about 3 mins per side till they are slightly golden brown and crispy.⁠

Remove them from the oil, strain on paper towel and sprinkle with flakey salt while everything is still piping hot.⁠

Then, serve em up! I recommend having these with an ice cold beer, but really anything cold and bubbly is a good bet here.⁠

Made a dairy-free ranch with some @kitehillfoods a Made a dairy-free ranch with some @kitehillfoods almond yogurt. Served it up with some grilled veggies & brown rice. Highly recommend 👍🏻 

DAIRY-FREE RANCH 👇🏻

1C Dairy Free Yogurt
1 tsp Garlic Powder
Pinch of MSG
Pinch of Salt
Lots of fresh ground black pepper
Juice from 1/2 lemon
Generous drizzle of olive oil

Get a nice big smear down on the plate and then pile up some brown + wild rice, lots of grilled veggies and some basil, or whatever other fresh herbs you want. Another drizzle of that dairy-free ranch and eat up.

Got a pork loin from @beachplumfarm and cooked it on high in the slow cooker for about 5 hrs with @sbrbbq sauce, sriracha, a spoonful of @greypoupon_us , some cumin, garlic powder and salt.  Shredded it up, topped with a simple slaw, pickles and piled it on @daveskillerbread rolls 💋

This makes a generous portion for two. Scale it up as needed.

• SAUSAGE ~ 1LB
• CANNED TOMATOES – 28OZ – CRUSHED, PUREED, WHATEVER YOU LIKE
• RIGATONI, OR YOUR PASTA OF CHOICE ~ 8OZ

The ingredient list is simple and so are the instructions.

Brown your sausage over medium heat. You want it to cook fairly slow here so the fat starts to render and you get it nice and golden brown on both sides. After your sausage is nicely browned, add in your tomatoes. If using whole canned tomatoes like I did, squeeze em to break them up a bit.

Let your sausage and tomatoes simmer for 20 minutes. Check for salt. I typically don’t need to add any since the sausage is usually salty enough. But you make the call here.

Then toss with your pasta. Add some cheese and eat up!!
