Tonnato Sauce:⁠
7 oz tuna in oil⁠
5 anchovies (I love the ones from @fishwife )⁠
1 C olive oil⁠
3 tbsp lemon juice⁠
1 oz capers⁠
2 tbsp mayonnaise⁠
⁠
In a blender, combine the drained tuna, anchovies, olive oil, lemon juice, capers, mayonnaise, and black pepper. Blend until smooth and creamy. If the mixture is too thick, add a bit more lemon juice to achieve a creamy consistency.⁠

Let chill and serve!⁠

Did a little American twist on the classic Italian Amatriciana. This version uses some smokey bacon and lots of freshly ground black pepper 🍝⁠

INGREDIENTS:⁠
1/2 lb bacon diced⁠
1 onion optional, finely diced⁠
28 oz whole peeled tomatoes or puree⁠
1 pinch red chili flakes ⁠
black pepper freshly ground⁠
salt⁠
⁠
1 lb pasta bucatini, spaghetti, rigatoni⁠
grated cheese Pecorino, Locatelli, or Parmigiano⁠
⁠
INSTRUCTIONS:⁠
Start by adding your bacon to a cold pan. Cook over medium heat until the bacon renders its fat and starts to crisp and brown slightly, about 5-7 minutes. If you’re using onion, add it in now. Cook the onions, with the bacon, until they are translucent and softened.⁠
⁠
Next, add in your red pepper flakes and/or black pepper, allowing them to toast in the oil for about a minute.⁠
⁠
Carefully add your pureed tomatoes to the pan, this will splatter when the tomatoes meet the hot bacon fat. Stir to combine, making sure to scrape any bits off the bottom of the pan. Let the sauce simmer uncovered over low heat for about 20 minutes. The sauce will reduce, and the bacon fat will emulsify with the tomatoes as it cooks.⁠
⁠
After 20 minutes, check the seasoning. You may not need to add salt depending on how salty your bacon was. I recommend adding some additional black pepper at this stage as well.⁠
⁠
Cook your pasta until it’s al dente, then toss it with the sauce and cook for another 2-3 minutes.⁠
⁠
To serve, top with plenty of grated cheese and more freshly ground pepper.⁠

Summer is NOT over and I will continue to eat cucumber and tomato salads for as long as I can. They are perfect. And they are my favorite. ⁠

1 large cucumber chopped in rough irregular shapes⁠
1 large tomato chopped in rough irregular shapes⁠
1/4 onion thinly sliced⁠
1 handful of cherry tomatoes halved⁠
1/4 c olive oil⁠
1/ 4 c red wine vinegar⁠
salt⁠
pepper⁠
1 small handful fresh basil leaves⁠
⁠
Combine cucumbers, tomatoes, and onions in bowl. Season generously with salt and pepper. Let sit for at least 5 minutes.⁠
⁠
Finish salad by dressing with oil, vinegar and lots of basil. Toss and serve.⁠

A recipe for some quick pickled red onions. Takes a few minutes to make, ready on 15 mins and so handy to have stashed in the fridge.

1 red onion sliced thin
1 C white vinegar
1/4 C water
2 tsp sugar
1 tsp salt

Thinly slice your red onions and add them to a tight fitting jar or air tight container. Pour over enough white vinegar to cover about 3/4 of the onions. Fill the rest of the jar up with cool water. Add in your salt and sugar. Cover and shake to mix. Set aside for at least 15 minutes and stash any you dont eat right away in the fridge.

For the Panna Cotta:⁠
1 envelope powdered gelatine ~4 tsp⁠
1/2 C sugar⁠
1/2 tsp salt⁠
2 1/2 C half & half divided⁠
3/4 C heavy cream⁠
1/2 vanilla bean seeds scraped out⁠
⁠
To Top:⁠
6 oz raspberries⁠
1/2 blood orange juiced⁠
1 tsp sugar⁠
1/4 C roasted pistachios chopped⁠
⁠
⁠
Combine gelatin, sugar, salt and 1C half & half. Mix to combine and let sit for about 10 minutes.⁠
⁠
Place pan over medium-low heat. Stirring constantly, cook for about 5 minutes or until mixture is completely smooth. You want all the sugar and gelatin to have completely dissolved.⁠
⁠
Remove from heat and add in remaining 1 1/2 C half & half, 3/4 C heavy cream and vanilla beans. Mix to combine. (Save that pod! Add it to a jar of sugar and now you have vanilla sugar any time you want.)⁠
⁠
Add mixture to a large serving dish or smaller individual containers if you want. Let chill in the refrigerator overnight. And, cover with plastic wrap after an hour or so.⁠
⁠
The next day, toss raspberries with 1 tsp sugar and the juice from 1/2 blood orange. Let sit for at least 20 minutes. When you’re ready to serve, top panna cotta with the raspberries and lots of chopped pistachios.⁠

Salted Caramel and Dark Chocolate Carmelitas. Here’s the recipe so far...

Ingredients:

1 cup flour
1 cup oats
3/4 cup dark brown sugar
3/4 cup melted butter
1/2 tsp salt

For the Salted Caramel:
1/2 cup white sugar
1/2 tbsp corn syrup
1/4 cup water
1/3 cup heavy cream
2 tbsp butter
Pinch of salt
1/2 tsp vanilla extract

The Other Bits:
3 oz dark chocolate, chopped
Flaky salt, for garnish

Preheat your oven to 350°F (175°C).
In a bowl, combine the flour, oats, dark brown sugar, melted butter, and salt. Mix until well combined.
Press half of the oatmeal mixture into a parchment-lined baking pan. Reserve the other half for topping.
Bake the base for 10 minutes, then set it aside.

To make the salted caramel:
In a saucepan, combine the white sugar, corn syrup, and water. Bring the mixture to a boil over medium heat.
Continue to cook until it turns a dark golden brown.
Remove the pan from the heat, then carefully whisk in the heavy cream. The mixture will bubble up.
Add the butter, whisking until smooth. Stir in the vanilla extract and a pinch of salt.

To assemble:
Pour the caramel over the baked oatmeal base.
Sprinkle the chopped dark chocolate evenly over the caramel.
Crumble the remaining oatmeal mixture on top.
Bake for 20 minutes, until golden and bubbly.
Remove from the oven, sprinkle with flaky salt, and let cool for at least 20 minutes before cutting.
