Got some framers' market stuff so figured I should make a pie out of it! Topped it up with some asparagus, roasted fennel, spring onions, sausage and lotsa fresh mozzzzzzzzzz 🧀 ⁠

Also got a jug of cider too. Cause it's the best.⁠

Full recipe and instructions for the dough is over on the site (link's in the bio) but quick version for ya is below 😉👇🏻⁠

Recipe makes 1 pan pizza in a quarter sheet pan – 9×13” or 10×15” both work.⁠
⁠
400G (1½ c + 3 Tbsp) Warm Water⁠
1 Tsp Active dry Yeast⁠
2 Tsp Honey or Sugar⁠
1 Tbsp Olive Oil⁠
500G (3 1/2 c) Flour⁠
1 1/2 Tsp Kosher Salt⁠
⁠
Mix water, oil, honey and yeast. Let sit 5 mins.⁠
⁠
In another bowl, mix flour + salt. Whisk well.⁠
⁠
Add the flour mixture to water & yeast mixture. Stir to combine. ⁠
⁠
Cover and let rise for 5 hours at room temp or overnight in the fridge.⁠
⁠
Line your baking sheet with parchment paper and plenty of olive oil. Dump dough on tray, pat down and stretch to cover sides and corners of pan. ⁠

Let rise for an hour at room temp.⁠
⁠
Preheated oven to 550°F (~285°C). ⁠
⁠
Bake for 10 – 12 minutes. Once you have some browning after 12 or so mins, set the oven to broil and let that pizza get bubbly and crisp on top, about 3-4mins. ⁠
⁠
Remove from oven and let cool for a few minutes. Slice and Eat up!
