Quinoa + Bulgur bowls with some roasted baby brocc Quinoa + Bulgur bowls with some roasted baby broccoli 🥦, corn 🌽, shaved fennel, tofu and lots of coconut 🥥 peanut 🥜 sauce. Oh and plenty of watermelon that Ry brought home! ⁠🍉 #readyforsummer

Sauce recipe is below and the rest of the bowl stuff is pretty straightforward. I just roasted everything at 425°F (~220°C).⁠

Coconut 🥥 Peanut 🥜 Sauce:⁠
1/2 can coconut milk, full fat⁠
3/4 C peanut butter⁠
~2tsp soy⁠
~1tsp chili paste (I had some super spicy harissa, so that's what I used)⁠
Juice from a lime⁠
1 tbsp brown sugar⁠
⁠
Mix it all up and bring to a gentle simmer over low heat. Stir for a min or two. You're all done when the color gets darker and any blobs of coconut fat are melted. Now drizzle on everything.

Made some porky + pea lettuce wraps. Pretty much d Made some porky + pea lettuce wraps. Pretty much did a fridge/freezer clean out, and this is what I was able to get together.⁠

Made some caramelized star anise onions, five spice ground pork 🐖, plenty of peas, cucs 🥒 , rice noodz and cute lil romaine lettuce cups 🥬
Last night's blackened salmon 🐟 caesar salad 🥗. Had it over rice and made some crispy chic pea "croutons" to go on top. Pretty simple and very delish. ⁠

🥗 The Dressing:⁠
- 1 clove garlic⁠
- a few dashed of Worcestershire⁠
- Juice from 2 lemons⁠
- tsp mustard⁠
- 1/2 c olive oil⁠
- 1/4 grated parm - more or less⁠
- s + p⁠
⁠
Blend everything up, I like to use an immersion blender for this. Taste and check to adjust for seasoning as needed.⁠

🐟 The Salmon & Chic Peas:⁠
- Salmon⁠
- 1 can chic peas⁠
- Olive oil⁠
- Salt⁠
- Blackening Seasoning ⁠(Thanks @stokedpop !!!)

Get oven preheated to 400F. Line tray with parchment. Lightly coat Salmon in oil and cover in blacking seasoning. Toss chic peas in a little oil and salt on a separate tray. Roast both for about 10-15 mins, or until salmon is cooked through and chic peas are slightly golden and crunchy.⁠

🍽️ ⁠Then, plate everything up. Add some rice, your greens tossed with dressing, the salmon and plenty of chic peas. I recommend some extra parm, an extra drizzle of dressing and some fresh peps. Done!

Feeling fruity 🍊🍌🍇 Ry Brough home some dr Feeling fruity 🍊🍌🍇 Ry Brough home some dragonfruit so figured I might as well make a full spread with some other goodies we had. Used a banana with some chia seeds, an orange, black grapes, blackberries and some @dangfoods coconut strips. It was very good!⁠
