An American twist on a classic Italian dish 🍝

An American twist on a classic Italian dish 🍝

The classic Italian Amatriciana sauce get’s an American twist with bacon instead of guanciale, and lots of freshly ground black pepper at the end.

For the Amatriciana Sauce:
1/2 lb bacon - diced
1 onion - optional, finely diced
28 oz whole peeled tomatoes or puree
1 pinch red chili flakes
black pepper - freshly ground
salt

To Serve:
1 lb pasta - bucatini, spaghetti, rigatoni
grated cheese - Pecorino, Locatelli, or Parmigiano

Start by adding your bacon to a cold pan. Cook over medium heat until the bacon renders its fat and starts to crisp and brown slightly, about 5-7 minutes. If you’re using onion, add it in now. Cook the onions, with the bacon, until they are translucent and softened.

Next, add in your red pepper flakes and/or black pepper, allowing them to toast in the oil for about a minute.

Carefully add your pureed tomatoes to the pan, this will splatter when the tomatoes meet the hot bacon fat. Stir to combine, making sure to scrape any bits off the bottom of the pan. Let the sauce simmer uncovered over low heat for about 20 minutes. The sauce will reduce, and the bacon fat will emulsify with the tomatoes as it cooks.

After 20 minutes, check the seasoning. You may not need to add salt depending on how salty your bacon was. I recommend adding some additional black pepper at this stage as well.

Cook your pasta until it’s al dente, then toss it with the sauce and cook for another 2-3 minutes.

To serve, top with plenty of grated cheese and more freshly ground pepper.

Salad Base:⁠
romaine lettuce⁠
1/4 C garted parm⁠
⁠
Caesar Dressing:⁠
1/2 C olive oil⁠
1 tbsp mayonnaise (optional)⁠
1 1/2 lemons - juiced⁠
2 cloves garlic⁠
2 tsp Dijon mustard⁠
3 anchovies⁠
2 tbsp grated parm⁠
fresh ground black pepper⁠
⁠
Homemade Croutons:⁠
4 slices sourdough bread⁠
1/4 C olive oil⁠
s + p⁠
⁠

Preheat oven to 350°F (175°C).⁠
⁠
Cut or tear bread into bite-sized chunks. Toss with olive oil and season with salt and pepper.⁠
⁠
Arrange on a sheet tray in a single layer and bake for approximately 30 minutes, or until golden and crispy. Toss halfway through.⁠

In a blender, combine olive oil, mayonnaise, garlic, Dijon mustard, and anchovies.Blend until smooth, stir in grated Parmesan, check for seasoning and adjust as needed.⁠

Tear or chop romaine lettuce into bite-sized pieces.⁠
⁠
In a large bowl, toss lettuce with several spoonfuls of dressing, making sure all lettuce is evenly coated.Add a generous handful of croutons and toss again.⁠

Arrange on plates and top with additional croutons, grated Parmesan, and fresh ground black pepper. Serve immediately.⁠

Chicken Cutlets:⁠
2 chicken breasts⁠
1 cup flour⁠
2 eggs⁠
2 cups breadcrumbs⁠
1 c olive oil for frying, NOT extra virgin⁠
⁠
Toppings:⁠
2 acorn squash⁠
2 tbsp olive oil⁠
1 bunch fresh sage⁠
2 small apples or 1 large, thin sliced⁠
fresh parsley⁠
⁠
Dressing:⁠
1 lemon juiced⁠
1 clove garlic grated⁠
1 tsp dijon mustard⁠
1/4 C olive oil⁠
salt⁠
pepper⁠
⁠
INSTRUCTIONS⁠
First up, get your acorn squash roasted. Slice and toss with olive oil and season with salt and pepper. Roast for ~50 mins at 350°F or until tender.⁠

Butterfly your chicken breast and pound it nice and thin. Then we bread, flour, egg, then breadcrumbs. I didn’t have breadcrumbs, so I just used crackers here. It was fine, but use breadcrumbs if you have them.⁠

Pan fry chicken cutlets until they’re nice and golden brown on each side and just cooked through. Then fry up that sage.⁠
⁠
For the vinaigrette I added, lemon juice, olive oil, garlic, a little Dijon mustard, salt and pepper. Slice up your apples and then add that crispy sage.⁠

Then it’s time to plate up. Get your cutlet, get your roasted squash, plenty of apples, plenty of that dressing, a good handful of toasted pine nuts. More of that crispy sage, because crispy sage on everything. A little fresh parsley and we eat.⁠

Caramelized onion pasta. And it's as easy as it sound. Lots of onions get fried in olive oil, tossed with pasta and topped with lots of grated parmesan. It's perfect.⁠

INGREDIENTS⁠
1 lb spaghetti or bucatini⁠
2 sweet onions, sliced⁠
1/2 C olive oil⁠
Parmigiano-Reggiano, grated⁠
⁠
INSTRUCTIONS⁠
⁠
Add onions and olive oil to a cold pan. Heat to medium and let the onions cook till they begin to brown around the edges. Season with salt after they start getting some color. Cook till they are golden brown around the edges and still have a little bit of texture. They shouldn’t be mush. Set aside, off heat, while you get your pasta cooked.⁠
⁠
Boil your pasta in generously salted water. Drain pasta and saving a little cooking liquid. Toss pasta with cooked onions and add in some of the pasta water if things look too dry. ⁠
⁠
To serve, pile up your pasta, shower in cheese and eat. ⁠
⁠
