This past year for my bday I was given BraveTart: Iconic American Desserts (thanks Jess and Kate!). If you haven’t heard of it, it’s by Stella Parks, and if you haven’t heard of her, go check her out over on Insta @BraveTart. If you have any interest in baking, you’ll be totally into it, she’s amazing. I haven’t quite gotten around to making all of the recipes just yet, but anything I have made was phenomenal. This would include some delish cinnamon rolls I made over the holidays.
One of the recipes I had been meaning to make for a while was the Upside-Down Pineapple Cutout Cake. Not only did the recipe look great after scanning through it, but the photos she had in there were adorable with the pineapple being cut into pretty little star shapes, rather than those canned rings you always see. And, while just about everything in the recipe is a pantry item, I just needed a good pineapple, so as soon as Ry brought one home it was go time! This one was a new variety from Del Monte, the Honeyglow, it was super sweet and really fragrant. I waited a few days till it was perfectly ripe, I was in the mood to bake, then I busted out BraveTart and preheated that oven. It was time to make the Upside-Down Pineapple Cutout Cake.
The whole recipe was super easy to follow, all of them are honestly. The combination of the pineapple, brown sugar, rum and coconut made the whole house smell sweetly tropical, which was a nice plus considering it’s literally been freezing here in Philly lately. And, this is certainly something I’ll be making again, especially considering the cake only lasted about 48 hours with just the two of us eating it…

I have this cake in the oven now. It was one of the many I dog eared after getting her cookbook about 5 years ago, that I had never gotten around to making. Tonight was the night! I had half of a leftover PinkGlow pineapple (yes they are pink) and added some dragon fruit powder to the batter to make it pink as well. The house smells heavenly just like you said!
I love that you made a pink one! Might need to try that myself. I haven’t made this cake in a while, but now you got me thinking I need to make one soon. I do remember it smelling insanely good in the house. Yum.

Hi Eden! No, unfortunately I don’t have the recipe for the Bravetart cake published here on the site. I didn’t want to be republishing another author’s work without their permission. But I do absolutely LOVE this cake and I highly recommend Stella’s book if you haven’t checked it out already.
