Endive
Crisp, pale and pleasantly bitter, endive is one of my favorite greens for elegant winter salads. Pair it with juicy citrus in an Endive Salad with blood oranges, ricotta and toasted hazelnuts, or with apples and walnuts in a holiday-ready Radicchio and Endive Salad. Its sturdy leaves stand up to bold dressings, like the creamy dressing on a Bitter Green Caesar Salad with roasted olive croutons. And frilly curly endive adds crunch to a summery Grilled Chicken and Peach Salad.
