Artichokes
Tender, nutty and a little earthy, artichokes are one of my favorite spring vegetables, and they’re easier to cook than they look. Grill baby artichokes and soak them in olive oil, vinegar and red pepper for easy Marinated Artichokes, then pile them onto a Sicilian-style Artichoke Pizza with fresh mozzarella, ricotta and prosciutto. Or roast them for an Artichoke Caesar-ish Salad with crispy beans and bagel croutons. Tip: baby artichokes are the easiest to prep. Snap off the tough outer leaves until you reach the pale green ones, trim the top and stem, and rub the cut sides with lemon so they don’t brown. Short on time? Good-quality jarred marinated artichokes work in a pinch.
