Chives
With their mild, fresh onion flavor, chives are the easiest way to finish a dish with a pop of green. They’re the star of the viral Radio Bakery’s Sausage and Chive Focaccia, and they top bite-size Steak Crostini with Horseradish Sauce and a classic Steak Tartare. They brighten up summer salads like Grilled Halloumi Cheese with Hami Melon and an Avocado Citrus Salad, and they’re the perfect garnish for a velvety Purple Cauliflower Soup with brown butter. Tip: snip chives with kitchen scissors instead of chopping them, which can bruise them, and add them at the very end so they stay bright and fresh. If you find chive blossoms in spring, they’re edible and make a beautiful garnish.
