Tip: a ripe peach smells sweet and gives slightly when pressed near the stem. For grilling and baking, look for freestone peaches, which come off the pit easily. To peel them, score an X on the bottom, drop them in boiling water for 30 seconds, then into ice water, and the skins will slip right off.
