I’ll turn just about anything into a Caesar—or at least a Caesar-inspired salad. It changes with the seasons and whatever I have in my fridge, but one thing always stays the same: the dressing. This Lemon Caesar Dressing is my go-to. Whether I’m making my Bitter Green Caesar, a Pink Radicchio Caesar Salad, or even a Caesar-ish salad with Artichokes and Bagel Croutons, this is the dressing I reach for. Most recently, I used it on a Shaved Brussels Sprout Caesar Salad (coming soon!), and it was absolutely delicious.

To make weeknight dinners easier, I usually whip up a big batch of this dressing, knowing I’ll use it a few times throughout the week. Whether it’s for a Classic Caesar Salad, a marinade for grilled chicken, or drizzled over a rice bowl, this dressing does it all. It takes just five minutes to make, and once you have it, you’ll want to put it on everything!

Ingredients You’ll Need

  • 1/2 cup extra virgin olive oil
  • 1 tbsp mayonnaise (optional) – Helps emulsify the dressing.
  • 1 1/2 lemons, juiced
  • 2 cloves garlic
  • 2 tsp Dijon mustard
  • 3 anchovies – Use white anchovies for a milder taste.
  • 2 tbsp Parmesan cheese, freshly grated
  • Fresh ground black pepper, to taste

This Caesar dressing uses white anchovies, but you can swap for the classic brown anchovies or leave them out entirely (see FAQs below).

Dairy-Free Option: Swap Parmesan for nutritional yeast for a dairy-free Caesar dressing!


How to Make the Best Homemade Caesar Dressing with Lemon

This quick no-egg Caesar dressing comes together in just three simple steps:

  1. Blend ingredients – In a blender, combine olive oil, mayonnaise, lemon juice, garlic, Dijon mustard, black pepper and anchovies. Blend until smooth. 
  2. Make it smooth – Add in grated Parmesan and quickly blend again until just combined and creamy. 
  3. Adjust seasoning – Taste and add more lemon juice or black pepper as needed.

Tip: If you like a thicker dressing, add an extra teaspoon of Parmesan or mayonnaise
