Salads

A great salad is about so much more than lettuce, and these are the ones I make all year long. In summer, it’s all about ripe fruit and tomatoes: a Grilled Peach Panzanella Salad with Burrata, the best Watermelon Salad with Feta, Olives and Pickled Onions, or a 10-minute Tuna Tomato Salad for an easy lunch. When the weather cools, turn to crisp, bitter greens and citrus, like a holiday-ready Radicchio and Endive Salad with apples and walnuts or a classic Sicilian Fennel and Orange Salad. And any time of year, you can’t go wrong with a Bitter Green Caesar Salad.
