Add torn olives, a dusting of sumac and cumin, and serve it all with warm pita or homemade pita chips, and you’ve got a very solid hummus dinner bowl situation.

Ingredients You’ll Need
Creamy Tahini Hummus with Lemon and Garlic – You’ll use about half the recipe to make these hummus bowls.
For the Spiced Ground Beef
- 1 lb ground beef – Get a high quality ground beef that has some fat in it. I wouldn’t recommend a super lean ground beef for this, you want the beef fat to take on the flavors of all those spices and to season the hummus once plated. If you do use a very lean ground beef, you’ll want to add in some extra olive oil when cooking.
- 1 shallot – Finely diced
- ¼ tsp cumin – Ground or whole cumin works here.
- 1 tsp paprika – Sweet, spicy or smoked. Any variety you like or have is great.
- ½ tsp cinnamon – I LOVE adding cinnamon to savory dishes (like in Kota Kapama) and it is so delicious in this spiced beef.
- Salt
- Olive oil
For the Herb Salad
To prep your herbs, wash them well, pat dry and pull off the leaves, removing any tough stems. We’ll be using them like a salad green, no chopping.
- Cilantro
- Parsley
- Dill
- Quick Pickled Red Onions – The quick pickled red onions add a nice bit of acid to the salad and goes so well with the rich spiced beef. If you don’t have any, and don’t want to make any, add in some extra sliced shallot or red onion to the salad.
- Lemon juice – Fresh lemon juice is the acid for our quick salad dressing. You could also use a light vinegar if you like.
- Olive oil – Extra Virgin for this
- Salt and Pepper

- Olives – Pitted and torn in half. Use whatever olives you like, I had a mixture of Greek and Sicilian olives.

How to Make these Hummus Bowls with Spiced Beef and Herb Salad
- Cook the Spiced Beef
Heat a few tablespoons of olive oil in a skillet over medium-high heat. Add the ground beef and cook for 1–2 minutes, breaking it up with a spoon. Add the diced shallot, cumin, paprika, cinnamon, and a generous pinch of salt. Continue cooking until the beef is browned, super fragrant and starting to crisp around the edges. Remove from heat and set aside. - Make the Herb Salad
Toss the parsley, cilantro, and dill with pickled red onions, a squeeze of lemon juice, a drizzle of olive oil, and salt and pepper to taste. Set aside. - Plate Your Hummus Bowl
Spoon a generous amount of hummus into a shallow bowl. Top with the warm spiced beef, herb salad, and torn olives. Finish with a drizzle of olive oil, a sprinkle of sumac, ground cumin, and flaky salt. - Serve it up!

Can I use store-bought hummus?
Yes, but it won’t be as good. Just being honest. Homemade warm hummus is ideal and nothing like a store bought version. But, if you’re going to use store-bought, get the best quality tahini hummus you can.
What else can I use instead of ground beef?
Ground lamb would be a great substitute or chicken. If you wanted to keep it vegetarian, and skip the meat, try spiced lentils or chickpeas instead.
Can I make this ahead of time?
You can, but it’s best served warm. You can make the hummus in advance and make sure to bring it to room temp before serving. Cook your beef and reheat it right before. And for the salad, have everything prepped and toss at the last minute.
